Stovetop Apple Crisp

Stove Top Apple Crisp for Breakfast

I started making this last summer when it was so hot I refused to turn on the stove for months!  It is a great sweet treat or breakfast and only takes about 10 minutes to make.

If you aren’t ravenous one apple will make 2 portions or if this is an actual meal count on one apple per person.

For the Filling:

1 Apple, chopped (I leave skins on cause they have good stuff in them!)
1/4 – 1/2 Teaspoon Cinnamon
1 Tablespoon Quality Honey or Maple Syrup
2 Tablespoons Coconut Oil or Butter
At least 1 Tablespoon lemon or orange juice (or whatever juice you have on hand)

Sautee until desired tenderness is reached.  I find about 2-4 minutes letting it bubble away and giving a little stir now and then.

Remove apples and leave most of the remaining juice.  Add the ingredients for the “crisp” part:

1/4 Cup Oats (we usually have cracked oats, this time we had steel cut)
2 Tablespoons Nuts (Sliced Almonds were what were in the freezer)
Couple Tablespoons Butter to taste
1 Tablespoon Quality Honey or Maple Syrup

Toast on medium high until it just turns brown – constantly stirring.  Top your apples and enjoy with fresh whipped cream, homemade yogurt or simply some milk or cream.
